Preheat your oven to 210°C.
Chop the turkey escalope and then blend.
Mix the minced turkey with the peas and parsley.
Cut out a sheet of aluminium foil and grease it with olive oil. Place your turkey mixture on the foil and sprinkle with grated gruyere cheese.
Close the papillote and bake in the oven for 15 minutes.
This dish can be served with small pasta shapes or rice.
