Carefully wash the courgettes and dice them finely.
Carefully wash the pepper, de-seed and cut into thin strips.
Peel and thinly slice the onions and garlic cloves.
In a frying pan, heat 2 tablespoon of oil, then add the onions, garlic and pepper. Then add the courgettes. Add the thyme, and season with salt and pepper. Cover and simmer for 20 minutes.
In another frying pan, heat the remaining oil and sear the salmon on both sides until the fish is properly cooked. Place a steak on each plate and add the vegetables.
