Provencal minced beef with rice

Ingredients
  • 300g rice
  • 400g minced beef
  • 2 tomatoes
  • 1 pepper
  • 2 courgettes
  • 2 onions
  • 1 clove of garlic
  • 2 teaspoons of mixed herbs
  • 1 tablespoon of olive oil
  • Salt
  • Pepper
Preparation

Cook the rice as per the instructions on the packet.

Carefully wash and finely dice the courgettes, the pepper and the tomatoes.

In a frying pan, heat the oil and fry the thinly sliced onions and pepper.

Then add the tomatoes, the courgettes and the chopped garlic.

Cover and cook on a low heat for about 20 minutes.

Add the meat. Season with salt and pepper and sprinkle with mixed herbs. Cook it all for another 10 minutes, making sure the meat is cooked through.

Serve immediately on plates with the rice.
