Pasta, cherry tomato and pepper salad

Ingredients
  • 150g pasta
  • 1 red pepper
  • 250g cherry tomatoes
  • 1 tablespoon of balsamic vinegar
  • 4 tablespoons of olive oil
  • Salt
  • Pepper
Preparation

In a large saucepan of water, cook the pasta as per the instructions on the packet. Strain and then rinse under the cold tap.

Pour the pasta in a bowl, add a drizzle of oil and mix.

 

Carefully wash the pepper, peel it and remove the seeds. Dice.

In a frying pan, heat 1 tablespoon of oil and cook the pepper for 10 minutes.

Carefully wash the tomatoes and cut them in half.

Add the pepper and tomatoes to the pasta in the salad bowl. Season with vinegar and 3 spoons of oil. Mix, then season with salt and pepper.
