Cut the chicken into pieces. Peel the onions and the garlic and roughly chop.
In a saucepan, heat the oil on a low heat and fry the chicken with the garlic, onions, ginger, salt and pepper.
Simmer for 10 minutes stirring from time to time, until the chicken is well cooked.
Wash the tomatoes and the bok choy carefully and chop before adding to the mixture. Sprinkle with a few coriander leaves. Simmer for a few minutes.
Serve hot with white rice or homemade bread.
