Potato and rocket salad.

Ingredients
- 1 tin of corn
- 10 small potatoes
- 1 handful of rocket
- 30mL pesto
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
Preparation
Carefully wash the potatoes and peel them. Cook them in a large saucepan of boiling water for 15 to 20 minutes. Strain and leave to cool. Cut them into rounds and place in the salad bowl.
In a bowl, blend the pesto, olive oil and lemon juice. Pour it over the potatoes Add the corn and the carefully washed rocket.
Mix and serve chilled.
