Pancakes with blueberries and bananas

Ingredients
  • 125g blueberries
  • 3 bananas
  • 30g sugar
  • 2 tablespoons of lemon juice
  • 2 eggs
  • 100g flour
  • 1 pinch of cinnamon
  • 1 pinch of salt
  • 15mL oil
Preparation

Peel the bananas and slice into rounds. In a large bowl, mash the bananas using a fork. Add the sugar, lemon juice, eggs, flour and the cinnamon.

In another large bowl, whisk the whites with a pinch of salt until stiff. Then fold them into your previous mixture. Add the blueberries.

Heat a little oil in a frying pan and fry the mixture to make pancakes. Cook both sides until they are nicely brown.
