“LEBANON” Lebanese salad

  • 150g radish
  • 150g cherry tomatoes
  • 3 onions
  • 1/2 cucumber
  • 1 green pepper
  • 4 pita breads
  • 2 tablespoons of chopped fresh flat-leaf parsley
  • 2 tablespoons of fresh mint
  • 30g rocket
  • 1 clove of garlic
  • 2 tablespoons of lemon juice
  • 6 tablespoons of olive oil
  • Salt
  • Pepper
For the salad mixture: Carefully wash all the vegetables. In a salad bowl, mix the radish and the sliced onions, rocket, cherry tomatoes, the peeled cucumber cut into rounds and the diced pepper.   For the vinaigrette: In a bowl, mix the crushed garlic, lemon juice, olive oil, chopped parsley and mint. Season with salt and pepper.   Heat the 4 pita breads in the oven at 200°C until they are nicely brown. Cut them into small squares and add them to the salad.   Mix all together and serve.
