“VIETNAM” Light coconut flan

Ingredients
  • 1/2 litre of pasteurised skimmed milk
  • 50g grated coconut
  • 3 eggs
  • 1 vanilla pod
  • 100g powdered sugar
Preparation

In a saucepan, mix the milk, sugar and the vanilla seeds previously removed from the pod using the tip of a knife, and then bring to the boil.

In a large bowl, beat the eggs and then add the boiling milk and coconut. Mix.

Pour your mixture into a tin and place in the oven in a bain-marie for 45 minutes at 180°C.
