Taboulé with grilled chicken

Ingredients
  • 4 chicken breasts
  • 1 clove of garlic
  • 6 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 225g couscous
  • A few mint leaves
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of coriander
  • 1 pepper
  • 125g cherry tomatoes
  • Salt
  • Pepper
Preparation

Pour the couscous into a large bowl and cover with 250mL of boiling water.

Leave for 15 to 20 minutes, stirring from time to time.

Add the oil and the lemon juice. Carefully wash the parsley, coriander and mint and then chop finely. Add the herbs to the mixture.

Carefully wash the pepper and the cherry tomatoes. Dice the pepper and cut the cherry tomatoes in half. Add them to the mixture.

In a frying pan, fry the chopped garlic and then the chicken breasts until they are nicely brown. Leave them to cool and then cut into strips.

Mix all together and serve.
