Stuffed round courgette

Ingredients (for 4 people):

  • 4 round courgettes
  • 400g pasteurised whey cheese
  • 3 tablespoons of olive oil
  • 1 shallot
  • 1 clove of garlic
  • 1 tablespoon of basil
  • Salt
  • Pepper

Carefully wash the courgettes. Cut off the top and scoop out the courgette flesh without piercing the skin. Cook them for about 20 minutes in a saucepan of water until soft but still firm.  Mix the cheese with 3 tablespoons of olive oil, chopped shallot, clove of garlic and basil.  Season with salt and pepper.

Stuff the warm courgettes.  Serve.
