Strawberry tiramisu verrines

Ingredients
  • 350g mascarpone
  • 250g strawberries
  • 4 eggs
  • 80g icing sugar
  • 16 sponge fingers
  • 6 mint leaves for garnish
  • 1 pinch of salt
Preparation

In a large bowl, separate the egg whites from the yolks.

Mix the yolks with the icing sugar and then add the mascarpone.

Beat the whites until firm with a pinch of salt and then gently fold the beaten egg whites into your mixture.

Crumble the sponge fingers. Carefully wash the strawberries and cut them in half.

In each verrine, alternate a layer of crumbled sponge finger, a layer of strawberries and a layer of the mascarpone cream mixture. Repeat as many times as necessary, finishing with a layer of mascarpone.

Decorate the top of your verrines with a few strawberries and a mint leaf.

Serve chilled.
