Spinach and lentil soup

Ingredients
  • 450g fresh spinach
  • 225g lentils
  • 2 tablespoons of olive oil
  • 1 large onion
  • 2 cloves of garlic
  • 1 litre of vegetable stock
  • Salt
  • Pepper
Preparation

In a saucepan, heat the oil and add the peeled and sliced onion and garlic. Brown for a few minutes.

Add the washed lentils followed by the vegetable stock. Simmer for about 30 minutes.

Carefully wash the spinach before adding it to the mixture. Cook for 2 to 3 minutes until the spinach leaves become soft. Blend everything, season with salt and pepper and then serve.
