Rice pudding with apricots

Ingredients
  • 70g small grain rice
  • 8 apricots
  • 50cL whole pasteurised milk
  • 4 tablespoons of caster sugar
Preparation

Mix the milk and sugar in a saucepan. Bring to the boil and pour in the rice. Reduce the heat, and gently simmer for 30 minutes, stirring regularly.

Carefully wash the fresh apricots and remove the stones. Cut into small dice.

Off the heat, add the fresh apricots to the rice pudding. Pour the mixture into individual dishes and serve.
