Potato, avocado and anchovy salad

Ingredients
  • 500g potatoes
  • 1 avocado
  • 1 tomato
  • 1 clove of garlic
  • 6 anchovy fillets in oil
  • A few mint leaves
  • 1 teaspoon of mustard
  • 1 tablespoon of vinegar
  • 3 tablespoons of olive oil
  • Salt
  • Pepper
Preparation

Carefully wash the potatoes and peel them. Cut into large chunks and cook in a large saucepan of boiling water for 15 to 20 minutes.

Finely chop the garlic and the anchovies. Place them in a salad bowl with vinegar, mustard and olive oil. Whisk this all together.

Drain the potatoes, add them to the salad and mix.

Leave to cool.

Just before serving, add the avocado and the washed and diced tomato. Add the chopped mint. Season with salt and pepper.
