Pepper rolls with mozzarella

Ingredients
  • 2 red peppers
  • 2 yellow peppers
  • 2 green peppers
  • 2 pasteurised mozzarella balls
  • Pesto sauce
  • Olive oil
  • Salt
  • Pepper
Preparation

Carefully wash the peppers and cut in half. De-seed. Bring a large saucepan of water to the boil and blanch the peppers for about 10 minutes. Strain and then peel them. Cut the peppers into wide strips.

Place the peppers in a dish and drizzle some olive oil over them. Season with salt and pepper.

Place them in the fridge for 30 minutes.

Cut the mozzarella into thin rounds and then cut each round in half.

Place the pepper strips onto the work surface. Place a half-moon of mozzarella onto each strip of pepper.

Roll up the peppers and skewer with a toothpick to keep in place. Pour a thin drizzle of olive oil on the rolls. Serve with a carefully washed green salad and pesto sauce.
