“MIDDLE EAST” Date and orange blossom cake

Ingredients
  • 150g pitted dates
  • 120g powdered sugar
  • 15cL black tea
  • 200g flour
  • 15cL pasteurised liquid cream
  • 3 eggs
  • 1 sachet of baking powder
  • 2 teaspoons of orange blossom essence
Preparation

Cut the dates into small pieces. Place in a large bowl and cover the dates with the hot tea. Leave to macerate for about 30 minutes and then strain. Place a little flour on a plate and roll the dates in the flour.

Preheat your oven to 200°C.

Break the eggs into a large bowl and beat with the sugar. Gradually add the flour/baking powder mixture, and then add the cream and orange blossom essence. Add the macerated dates and blend.

Grease a cake tin and pour in the mixture. Bake in the oven for 30 minutes and eat once cooled down with a cup of mint tea.
