Lentil salad with salmon

Ingredients
  • 200g lentils
  • 120g salmon fillet
  • 1 carrot
  • 3 tablespoons of olive oil
  • 2 tablespoons of vinegar
  • 1/2 tablespoon of mustard
  • Chives
Preparation

Put the lentils in a large saucepan of cold water, bring to the boil and cook for about 30 minutes.

Strain the lentils and leave them to cool down.

Carefully wash the carrot, and then peel and grate it. Cut the salmon into strips and fry in the pan until nicely cooked. Add the salmon and the grated carrot to the lentils.

Mix the mustard, olive oil and vinegar. Drizzle the dressing over the salad and sprinkle with chopped chives.
