Carefully wash the peppers. De-seed and peel the peppers and cut into strips.
Carefully wash and dice the courgette.
Peel and chop the shallot and garlic clove. In a frying pan, heat the oil and cook the shallot and garlic.
Add the curry, the pepper and the diced courgette and cook for 2 minutes.
Pour in the coconut milk, season with salt and pepper and bring to the boil.
Reduce the heat and simmer for about 15 minutes.
Add the cod cut into pieces and continue cooking on a low heat for about 10 minutes until the fish is properly cooked.
